For general knapping work, look at Nick Toth's publications, as well as
those of Kathy Schick. For a more ethnographic perspective, check out "The
Last Stone Axe Makers" by Toth, Clark, and Ligabue, Scientific American,
July 1992, 267 (1): 88-93.
