You might want to check out _The History of Food_ by Maguelonne
Toussaint-Samat (1987, Blackwell: Cambridge) and chapter 5 of
_Re-Constructing Archaeology: Theory and Practice_ by Michael Shanks and
Christopher Tilley (Routledge: London, 1987). Shanks and Tilley do a
nifty little number on the symbol of beer in Britain. It translates into
the USA fairly well.
