In my History of Anthropological Theory, we used the following books:

High Points in Anthropology, 2nd edition by Paul Bohannan and Mark Glazer and,

The Study of Culture by L.L. Langness

I found these books, especially the Bohannan and Glazer, to be easily
accessible to undergraduate level students while imparting enough
information to spur further inquiry. "B&G's" book gave a brief
introduction to the Anthropologist discussed, including a brief summary
of their theoretical contributions, as well as a brief excerpt from one
of the Anthropologists major works.
