Geertz quote?

I have heard a statement that some say is attributable to Clifford Geertz.
I am wondering if someone might have a lead on where to find it in print
(i.e., a citatation).
The statement goes something like this:
'While anthropologists often study in villages, they do not study villages
per se'.
