Does anyone know who said this?

In the forward to "Surviving Fieldwork" Roy Rappaport says:

"Someone...one of our colleagues, I think...once charaterized
anthropologists as "otherwise sensible people who don't believe in the
germ theory of disease."

This quote has also been heard as:
"An anthropologist is an otherwise sensible person who doesn't
believe in the germ theory of disease."

Does anyone know where I could find the original of this quote? I need to
find a complete citation for it. Rappaport does not give a source in his
use of it. Any ideas on where or how I can find this would be greatly
appreciated.
