Assistance to set up Simulation Dig requested

I am a anthropology teacher in high school and I feel that my students
could benefit from participation in a "canned or simulation" dig. I would
be willing to construct the dig site using bones (animal) chards of
pottery and other items normally found in dig sites. I would prefer not
having to reinvent the wheel however and am asking any of you if you know
of any literature readily available that could assist me in planning,
implementing and carrying out this simulation activity. I am open to any
and all suggestions that you might be able to provide me.
