Undergraduate fieldwork

I'd like to hear more from people who have either done undergraduate fieldwork or worked with students doing same. My question is, what do people actually
do? And to what extent does what they do approximate "real" fieldwork.
I ask because, reflecting back, the classic fieldwork situation is that of
someone who goes off to live for a year or two in an alien place, acquire an
new language (for day to day survival as well as research purposes) and
participates in as well as observes the situation in which they find themselves. It's the immersion in an alien way of life for a substantial length of type
that lies at the heart of my own, prototype image of fieldwork. I guess my
question is: Can undergraduates, guided by responsible teachers, come anywhere
close to this experience during a few weeks in a summer?

Puzzled,
